We are recruiting a talented and experienced Head Chef for a premium hospitality employer in Malta. This senior culinary role offers full kitchen leadership, menu autonomy, and the opportunity to build and develop a high-performing brigade in one of Malta’s most sought-after dining environments.

About the Role

As Head Chef, you will take complete ownership of the kitchen operation — from creative menu development and cost control to brigade management and service delivery. You will lead by example, inspire your team, and ensure every dish that leaves your kitchen reflects the highest culinary standards.

Key Responsibilities

• Lead, inspire, and manage the full kitchen brigade across all sections and shifts
• Create, develop, and implement seasonal menus aligned with concept, budget, and client expectations
• Maintain consistent food quality, presentation, and portion standards at all times
• Control food cost and kitchen P&L, achieving GP targets and minimising waste
• Ensure full HACCP compliance, food safety standards, and allergen management
• Recruit, develop, and retain talented kitchen professionals at all levels
• Manage stock, ordering, and key supplier relationships
• Collaborate with management on events, promotions, and special menus
• Drive a culture of excellence, professionalism, and continuous improvement

Requirements

• Proven track record as a Head Chef or Senior Sous Chef ready for the next step
• Strong culinary skills across multiple cuisine styles and service formats
• Excellent leadership with demonstrable experience building and developing kitchen teams
• Sound financial acumen — food cost, GP, budgeting, and cost control
• Comprehensive knowledge of HACCP, food safety legislation, and allergen compliance
• Experience in high-volume, hotel, or fine dining kitchens preferred
• Passion for quality, creativity, and guest experience
• EU passport or valid work authorisation for Malta
